Growing up in Kansas City, there was only one kind of Mexican food. It was served in dimly lit restaurants with stucco on the walls, red candles on the tables, chips and more chips, and lots of grease. I learned after I moved to California that real Mexican food is much better, much tastier, and much healthier. I have learned during my visits to Mexico that each part of Mexico has its own regional dishes, sauces, beverages, and other delights. To live in Mexico is to have access to some of the healthiest indigenous foods in the world. It’s a real treat, so basically I’m gonna show you what I eat.
